Simple salad recipe

This simple, yet delightful recipe serves 2 people. Have it all to yourself for a decent lunch.
Ingredients
- 250gm baby plum tomatoes
- 2 carrots
- 2 snack cucumbers
- Small iceberg lettuce
- Drizzle of olive oil
- Salt to taste
- Black pepper to taste
Method
Don't brace yourself for endless chopping and sweating over the worktop, this will take you literally 5 to 10 minutes. Toss each ingredient in the bowl as you chop it and give it a mix at the end. Et voila.
- Wash and halve the tomatoes and place them into a large glass bowl.
- Peel and grate the carrots into the bowl with the tomatoes.
- Wash the cucumbers and slice into 2cm chunks and put them into the bowl.
- Season the bowl well, with salt and pepper and drizzle a little olive oil. Mix until the tomatoes, carrots and cucumbers are coated.
- Peel off the outer layer of the lettuce if need be. Cut in half.
- Wash both halves under running water and shake out as much water as you can.
- Cut out the core and discard.
- With one half of the lettuce, dice into 2cm pieces. Cut up the other half and put the pieces into the bowl.
- Season again with salt and pepper. Drizzle more olive oil and toss thoroughly to mix in the vegetables from the bottom.
- Serve.
Notes
The baby plum tomatoes can be replaced with cherry tomatoes and the iceberg lettuce can be substituted with Romaine or Little Gems. Ordinary sized cucumbers can be used in place of the snack cucumbers. They will need to be quartered to 2cm segments. If you feel you'd like the whole thing for a meal, add some protein in the form of cheese, boiled eggs or chicken breast meat.
