Baby potatoes recipe

This recipe serves 2 portions. You can substitute baby potatoes with a waxy variety of larger potatoes but trust me on this, baby potatoes are the ideal for this recipe. This here, is a sure way to jazz up your old boring, plain boiled potatoes or mashed potatoes which until now you thought were the best way to serve them.
Ingredients
- 350g or 8 baby potatoes
- 2 teaspoon oil
- Medium sized onion, diced 1cm pieces
- Dessert spoon soy sauce
- Tablespoon mayonnaise
- Teaspoon salt
Method
You may think that soy sauce and onions are a strange choice but I found them to be a perfect combination. You have the savoury of the soy sauce with the sweetness and crunch of the onion, bringing out best of the potato flavour and texture.
- Scrub the baby potatoes under running water with skins on and cut into 2cm thick slices. If you are using a larger potato, scrub clean and cut them into small chunks at least 2cm thick.
- Place the potatoes in a saucepan with water just enough to cover them and add the salt. Boil for 20-25 minutes on a medium heat.
- Once 20 minutes are up, test one of the potato pieces to see if its cooked through. If not, boil for a further 5 minutes and check again.
- In the meantime whilst the potatoes are on the boil, heat up the oil in a separate small frying pan. Once the oil is hot, add in the onions and soy sauce to cook for 5 minutes. Turn the heat off and let the onions cool down.
- Once the potatoes are cooked, drain and put in a bowl. Add the onion and put in the mayonnaise and mix until everything is covered evenly.
The potatoes are now ready to serve warm, or cooled and chilled to eat at a later time. You can enjoy these bad boys with absolutely anything, a match made in heaven when you serve it with a steak or kiev. Or as I suggested once, with chicken pie. Bon apetit!
